Contrary to Common Belief Many people believe that the best way to store their coffee is in the freezer. This is a common misconception that only leads to changing the taste of their coffee for the worse. When coffee is roasted, it undergoes a change in the chemical makeup. It starts to produce wonderful oils within itself that give us the great taste we are looking for when we brew that special cup. If we freeze the coffee beans (or grounds) we end up freezing the oils within the coffee. Then through the process of thawing the beans or brewing them directly out of the freezer, the oils thaw also and their taste changes. We lose that "freshness" that comes from oils that have been untouched and building up inside the beans waiting to be brewed into that special cup and savored till the last drop. What we end up with is a cup of water that has been steeped with the taste of the shell that once held the wonderful oils within but are either now dried up or tasting like they have been "frozen and thawed".
